We’re seeing plenty of potatoes coming through our warehouses, so now’s the perfect time to get inspired in the kitchen.

In this video, Liam, our Culinary Lead, shares three simple, delicious ways to make the most of surplus potatoes. Whether you’re cooking for your community or at home, these easy recipes are designed to help you reduce food waste and get more from every ingredient.

Each month we spotlight a seasonal ingredient commonly found in FareShare Cymru deliveries.


Store

  • Keep in a cool, dark, dry place.
  • Store in a paper bag, hessian sack, or open container to allow air to circulate.
  • Remove any damaged potatoes to help the rest stay fresher for longer.

Freeze

  • Cook before freezing for the best texture.
  • Cool completely, then freeze in an airtight container or freezer bag.
  • Best used within 3 months. Defrost in the fridge overnight and reheat thoroughly before eating.

Kitchen Tip of the Month

Got sprouting potatoes?

If you’ve opened a bag of potatoes to find they’ve started sprouting, don’t throw them away just yet. In many cases, they’re still perfectly good to eat and can be used in all your favourite recipes with a little preparation.

Are sprouting potatoes safe to eat?

Yes – as long as the potato is still firm.

Before cooking:

  • Remove all sprouts.
  • Cut away any green areas.
  • Peel the potato before cooking.

When should you throw them away?

Potatoes should be discarded if they are:

  • Soft or mushy.
  • Completely shrivelled.
  • Rotten or have an unpleasant smell.

If they’re too old to eat but have healthy sprouts, you can even plant them to grow your own potatoes.

Cook them your way

Once prepared, sprouting potatoes can be used just like any other potato. They’re ideal for:

  • Mash
  • Roast potatoes
  • Chips
  • Wedges
  • Hash browns
  • Soups and stews

You can also freeze cooked potatoes for up to three months.

Give them a second life

If your potatoes aren’t suitable for eating, don’t waste them. Cut them into pieces, making sure each piece has a sprout, then plant them in soil with the sprout facing upwards. Keep them watered and, with a little patience, you’ll have your own crop of potatoes.

About Surplus Food

Why does FareShare supply surplus food?

Good quality food can become surplus for many reasons, including overproduction, packaging changes, forecasting errors or seasonal demand. Rather than going to waste, it’s redistributed to charities and community groups across Wales.

Why is every delivery different?

Surplus food changes every day depending on what is donated. This means no two deliveries are ever exactly the same.

Can I plan menus around surplus food?

Yes! Build flexible menus using core ingredients and adapt recipes depending on what’s available each week.


Food Safety

What’s the difference between Best Before and Use By?

  • Best Before relates to quality. Food is often safe to eat after this date if stored correctly.
  • Use By relates to safety. Food should not be eaten after this date.

Can I freeze food?

Many foods can be frozen before their Use By date. Always check packaging for guidance.

Can I refreeze food?

Only if it has been cooked after defrosting.

Fresh Produce

What can I do with soft fruit?

Blend into smoothies, make compotes, bake into cakes or freeze for later.

Can bruised vegetables still be used?

Yes. Simply remove any damaged areas before cooking.

How do I revive wilted salad?

Place leaves in iced water for 15–30 minutes.
